Muddy Mo Coffee Company is a family-owned business that opened at Pony Express Plaza in St. Joseph this month with the goal of offering specialty drinks to customers.

Michelle Pritchard, owner, opened the company with her husband, Steven and her son Colton, works in the store. She is a native of St. Joseph but formerly owned a coffee shop in Des Moines, Iowa.

They serve four signature drinks that she created to reflect the Midwest. The drink Muddy Mo consists of chocolate, caramel and almond flavors. The Mudflat is a blend of chocolate and toasted marshmallow. The Black and Gold option is made with chocolate, English toffee and caramel. And finally, the Cherry Smash is made with cherry, vanilla and chocolate flavoring.

In addition, they serve specialty drinks such as caramel macchiatos made with a home-fire roasted bean, cappuccinos and lattes.

“The beans are roasted in Iowa near the Missouri River and they’re sent down to us within 12 hours of roasting so they are very fresh,” Pritchard said. “Then we grind them here daily as I need them and then I brew it throughout the day.”

The shop also offers chia tea that is purchased as leaves, and not in a powder blend, that are steeped for around six minutes before serving to customers.

“We also offer Stash Teas because it is a brand that you cannot find in stores,” Pritchard said. “It’s a very good brand that some coffee shops offer that you can only get through certain vendors.”

Pritchard said they will serve food for a light meal including salads, donuts, bagels, pies and croissant sandwiches.

In the store, Pritchard also sells handmade bookmarks and greeting cards that she created as part of her other business called Just Like My Art. They offer beaded bookmarks and she has a line of paper bookmarks.

“I design every single card,” Pritchard said. “They are all done either with ink stamping or with watercolor and then I add the embellishments and the quote. They’re all blank cards inside. There’s no sentiment on the inside so the customer is free to do that on their own.”

She began creating gift baskets in St. Joseph in 2001 and will have a line at the store during the holidays.

The shop will be open from 7 a.m. to 7 p.m. on Monday through Saturday at 1311 North Belt Highway. They can be contacted by phone at 816-284-0095.
